Growing up with parents who had a deep appreciation of food provenance, it is no surprise that Denise ended up working in a food related area. A love of good food led to a passion for collecting and growing a wide range of herbs, many of which were not widely available.
This led to an interest in focusing on native Irish herbs for food and medicine, which makes sense in the current climate where environmentally friendly, sustainable, seasonal and local produce are the obvious choice.
